Coconut Oil Oats

Today is the big day! Well, not really.

It’s the beginning of a big week, I guess I should say. Today I’m taking all of my things up to the city, dropping them off, and heading right back to Tampa for a long weekend of yoga teacher training. It’s going to be a whirlwind, but I think I can handle it Wink

I, of course, made time for a delicious breakfast. Someone mentioned the other day that I should find a way to put coconut milk in my breakfast. Well, I have actually been doing this for quite some time!

This has been my latest favorite concoction. I have been having it every morning for a couple of weeks:

– 1/2 cup of old fashioned oats

– 1/3 cup of light organic coconut milk

– 1 cup of water

– 1 tbsp chia seeds

– cinnamon

– dash of salt

– a touch of agave (for a little some somethin’ Open-mouthed)

– blob of almond butter

You guys must seriously try these.” Get it? Coconut…Oats….. Okay, okay, I’ll stop! I just can’t help myself sometimes!

This bowl is loaded with lots of healthy fats and fiber and should do an excellent job of fueling me through a very busy day!

I’ll leave you with a bit of soul food for the road…
