Last night’s dinner was such a success that I used lots of the same flavors for tonights meal, per their request. I’m actually a little worried that he will drink the peanut sauce when no one is looking…
Anyway. I started out by cooking some brown rice in a rice cooker…
This was actually my first go with the rice cooker. My friend Stacy sold me on it the other night when she made us some delicious dahl right in this very same rice cooker. I figured it would be perfect for when I am at school next semester…apparently they are very versatile. I figure I can make some pretty healthy meals in there while I’m at school. I just made some plain brown rice tonight as a base for a stir-fry.
While the rice was cooking I prepped the goodies for a Tofu and Veggie Stir Fry with Peanut Sauce.
The peanut sauce is just a blend of soy sauce (tamari, actually), rice wine vinegar, sesame oil, honey, ginger, garlic and crushed red pepper. Oh, and peanut butter. Duh. I didn’t measure anything so I don’t have an exact recipe but I say if you want to try it then just start throwing stuff into the blender…it’s the best way to cook!
Once everything was prepped I got a large skillet super hot, then added the tofu (I used extra firm) so it would get a nice crisp crust.
Then came the fun part…pouring on the sauce.
Look at that creamy goodness. Thanks to the honey the sauce thickens up nicely and coats the tofu to make a very luscious sauce. I tossed the veggies in to cook a bit while the sauce worked it’s magic on the tofu. Oh, I added some basil too. Basil goes with everything.
And voila! I put the stir-fry on top of the rice and sent along some extra peanut sauce so they could drink it pour it on when they were ready to eat their dinner.
Looks pretty darn good, huh? I’m thinking I’m going to have to make this with shrimp for myself in the very near future. I don’t actually eat soy (we don’t get along very well) but this sure did look delicious. It would be great with chicken too.
It’s funny because I’m cooking more now than I ever have…but I keep eating junk! Actually not junk, just not any real meals. I have been a snacker lately…lots of fruit, salads here and there. Whatever sounds good at the time. It’s quite ironic but oh well. I’m planning on making a nice, real lunch tomorrow to stop this madness.
In other news…I’m going to New York City on Thursday!!! My mom and I are headed up to visit my future home for the weekend. And to play in the city too, of course. I’m super excited and ready to conquer my list of “places to go.” We were just in the city this past Christmas but I haven’t been in the Summer for years and can’t wait to explore. We are also going with a different agenda this time; food, yoga, fun. It’s gonna be a good time!
Tomorrow will be spent packing and getting ready for the trip. Wooo! I can’t wait to share my adventures with you. See ya tomorrow!
