Here’s what I’ve got

So I thought I would take a second to show you “what I’m workin’ with.” No, not my derriere…my kitchen! Where the culinary magic happens. We have a little kitchenette here at the house with a microwave, a refrigerator, a little table, an ice machine (to the left) and a coke machine (hiding in the back left corner) that I used to frequent back in my Coke Zero days.

It’s a tiny little thing but it gets the job done! I also have a little paring knife that I cut my fruits and veggies with:

See? It doesn’t take much to prepare good, healthy food. Here’s the magic from today; a wrap with spinach, cucumber and carrots, a little Honey Dijon dressing and some blackened tofu that I picked up from the hot bar at Mother Earth yesterday along with an apple.

The tofu was cooked perfectly! They make their hot foods daily using organic ingredients. They also have a little organic salad bar and 4 or 5 soups to choose from every day. It’s not a Whole Food’s but it’s perfect for a quick go-to meal.

I ended with some carob chips. I’m obsessed.

Hope your Monday is going great. I’m off to register for Fall classes (already) and study for the Business Law exam I have tonight. All while staying present of course =)
