What a day it has been! I’ve been running around like a crazy person all day trying to get ready for my trip to New York tomorrow. We live in less than 12 hours and I have absolutely nothing ready…no minute like the last minute I guess!
I did, however, manage to make one last meal and even made some extra for a quick meal tonight for my Mom and me.
Greenwise always has this really delicious quinoa salad that I have been dying to attempt for quite some time. Today when I was at the store I stood in front of the glass window and memorized the ingredients…then searched the store for them. Love doing that.
In this salad: Quinoa, dried cranberries, pumpkin seeds, peanuts, edamame (left this out for my batch), spinach, lemon juice, lime juice…and I think that’s about it. I jazzed mine up a bit with some green onion, lime zest and some shrimp. Served over a bed of spinach and voila…dinner!
Seriously, I think the shrimp made this. The quinoa salad was really good (loved the cranberries and peanuts and hints of lime!), but the shrimp was the star. I just sautéed the shrimp in some olive oil and the zest and juice of one lime, then added some fresh mint and basil from the backyard when they were almost done. It’s my new favorite…try it!

Visit New York, my future home. We are taking a tour in the morning and will return in the evening for the Friday Night Dinner that is put on by the students. Woah – can’t believe that will be me in a year!
Saturday:
Yoga in the morning.
A show? We are flying by the seat of our pants here….
We have a long list of places (restaurants, stores, etc…) we want to go to and are looking forward to the adventure! I can’t wait to tell you all about it. I’m taking my computer and will hopefully be able to post a bit, as I know you will just be on the seat of your pants….kidding, of course.
It’s an early start for us tomorrow…our flight leaves at 7! Good night!
