Say hello to my new favorite food…
Yep, I love ‘em. I’ve been wanting to make these since my first taste the other night. They are so easy, and so healthy for you (click this link for lots of great beet info!). All you have to do is chop the greens off the top, stick ‘em in a pot full of water, and boil away for about 45 minutes. When they are done you just rinse them and the skin comes right off. Easy peasy. And they are quite pretty too! I think I’m going to try roasting them soon.
We had them with some grilled chicken and salad which made for a light dinner on this Memorial Day.
Mmmm. We were going to grill some pineapple too since it’s a grillin’ kind of day but we were all very content after this meal.
In other food news…After swearing off green smoothies for a bit, I figured out a new way to get in some extra servings of greens…breakfast!
I was in the mood for something a bit more savory this morning so I made a Greek Scramble of sorts with about 2 cups of spinach, tomato, 1 egg and 2 egg whites, and some feta cheese all rolled up in an Ezekiel tortilla. It was very messy. But very good.
Don’t worry, I still managed to get my sweet flavors in today…
Medjool date with raw almond butter…and chocolate cake. Still can’t believe how delicious it is.
Speaking of raw almond butter…I talked to Liz yesterday for a bit and we got on the topic of almond butter (what, normal people don’t talk about almond butter? Oh.) She told me that there is actually no such thing as a truly raw almond here in the US thanks to a pasteurization law that was passed not too long ago. They ruled that all almonds must be pasteurized for safety purposes because of a few cases of salmonella but companies are still allowed to label it raw. I was quite shocked to find this out! Do you use “raw” almond butter? What are your thoughts? As for me, I think I will switch back to my favorite roasted almond butter, especially since I don’t LOVE the raw stuff. It doesn’t taste like much to me. And it’s not even raw!
