Nothing on my Mind

Howdy! Well, I think I’ve got everything. I’m all packed up and ready to hit the road. We will be leaving around 4:00pm and arriving around 9:30 or 10:00pm tonight. We have a meeting at 11:00pm tonight (!) and a full day of meetings tomorrow from 9:00am until about 11:00pm with breaks for lunch and dinner. We will finish on Sunday around noon. My roommate and I have decided that we are going to enjoy it and have fun despite the long meetings and hours. There are 14 girls who will be attending the conference from our chapter so it should be a fun time.

After my morning preparations, I broke for lunch around 12:30. I heated up some Curried Butternut Squash Soup along with an Ezekiel cinnamon raisin English muffin and a side salad with added veggies from the salad bar at the house. I topped half of the E.M. with Fage 2% and a drizzle of honey..SO good…and much healthier than a spread such as cream cheese!

I ended up not really eating the soup…something about it wasn’t appetizing and I couldn’t stomach it. I had these two little gems for “dessert”.” Because chocolate in my oats wasn’t enough…

Not only did I pack clothes and such, I packed PLENTY of snacks. I went to this same conference last year and was miserable not having something healthy with me. They serve a boxed lunch with a “sandwich” of just bread and meat, a cookie, and a bag of chips. I will not be partaking this year and packed a few (haha) things to take along.

I made little baggies of cereal; a blend of Kashi Go Lean Crunch and Newman’s Own Sweet Enough. I am bringing two bananas to top it with and individual bottles of vanilla soymilk. I also packed a little wrap with Boar’s Head Ovengold turkey, sun dried tomato hummus (in between layers of turkey so it doesn’t make the wrap soggy) and a handful of spinach for lunch tomorrow along with an apple and a fage 2%. I am bringing a few mini Clif bars, 2 chocolates (because I can’t live without it), and some tea bags.

All the cold things will go into a little cooler that is perfect for short road trips. Dinner tomorrow night will be at Carrabba’s and will be a nice treat after a long day of meetings. We will probably stop somewhere to eat tonight on the way out of town too.

I think I am taking preparation to a WHOLE new level! But for me, enjoying myself and being comfortable and content means fueling my body with healthy and simple fare that makes me feel good. I probably forgot something basic like underwear…better go check!
