Prom Dresses and Breakfast

Yesterday started out just like any other day. A little blogging, lots of coffee and breakfast, which consisted of 10-grain blueberry pancakes that I made this past weekend for my nephews, and froze the leftovers.

Seriously people, I love easy breakfast options. The only reason that I dont make oats everyday is that Im just too lazy. I want something that I can quickly grab and doesnt require much thought. Also, to be perfectly honest, breakfast is my least favorite meal of the day. Im not a huge fan a sweet things, so I feel like my breakfast choices are limited.

Breakfast was followed by some work, dog walking, dishes and cleaning. For lunch I had more tempeh (sans bun) with BBQ Sauce, green beans, cherry tomatoes, a handful of tortilla chips and a not so ripe pear. Warning: I tend to eat the same thing over and over again. I hate having leftovers in the fridge, so I keep eating whatever it is until its gone.

Also, lots of water on the side. I drink a ton of water throughout the day and generally always have a water bottle with me. I just realized that on the blog it only looks like I drink coffee and tea, which I do, but also water. Gotta stay hydrated!

Post lunch is when something amazing happened! My parents were in town and graciously offered to stop over and help me with some home repair. Listen ladies and gents, I love my husband and he has many talents, but home repair is not one of them (Its okay honey. You keep doing what you do best! Teaching the youth and looking pretty!).

Anyway, as my parents pulled up to our house I noticed that the back of their car seemed to be filled with crap my childhood hopes and dreams.

I love my parents, and they love all three of their children, but when we moved out there were no tears just the sound of fanny packs zipping and Bermuda shorts being pulled up way too high (I kid). They are spending their retirement living life to the fullest, a la Sunset Days, and take every opportunity they can to move our stuff out of their house. Everytime they come, they bring something from their basement. Needless to say, they are now banned from visiting us!

But seriously, what self-respecting, 26-year-old woman doesnt need her prom dresses, a green suede coat, American Girl dolls, a half-box of freeze pops, an ugly vase she made in high school ceramics class, a pilates kit (okay, that might be useful), and a box of CD cases (just the cases, no CDs).

Honestly, Im hard-pressed to determine why this isnt awesome! Much better than the accordion and Guns N Roses posters that my parents delivered to my sister and brother!

After showing my guy all of the awesome loot, which he didnt care about was really excited for, I finally got dinner in the oven. I made enchiladas. Chicken for him and tofu for me. This is the first time that I made tofu enchiladas and Im happy to report that they turn out well. Sometimes tofu freaks me out, so Im not sure what I was expecting, but they tasted great! I also had a side of avocado (I hugged a fat today), more green beans and cherry tomatoes and another handful of tortilla chips. Dinner was delicious!

I also may have enjoyed a glass (or two) of wine, while wearing my prom dresswait, no I didnt mean that!

On that note, Im off. I have a conference call in 30 minutes. Just enough time to get out of this dress and wash this orange freeze pop off my hands!
