Sunday is my favorite

Around lunchtime, we whipped out the Wild Mushroom Agnolotti by Buitoni sent last week.

As much as I love pasta, I really have to be “in the mood” for it. Daddy-o cooked it on the stove, just boiling it for a few minutes, and topped it with some EVOO and basil. The family ate it for lunch but I tried a bite and I must say that it was delicious. I often find that packaged foods like this have a funky taste, but the mushroom was definitely there and made the ravioli savory, light and delicious. Thank you!

The basil looked and smelled so good that I decided to make a wrap using it along with leftover grilled chicken, Sonny & Joe’s Hot Enough Hummus that I got earlier this week, and sun-dried tomatoes.

I threw a GIANT handful of spinach on that. Simple and delicious.

I spent my afternoon studying and just getting ready for the two finals I have left on Monday and Tuesday night. I took a snack break around three and had one of my favorites…

Just some FAGE 2% with a chopped pink lady apple and some homemade granola. Doesn’t get much better.

I realized I was lacking in the fruit department as we started to prepare dinner and decided the best fix for that would be a glass of White Sangria, duh.

I just love this recipe. So light and refreshing. I will have to share that with you guys soon. YUM.

For dinner we made Asian Grilled Salmon using this recipe by Ina Garten. Very simple and very delicious. The smell was amazing. But that’s probably because I think soy sauce smells delicious. We served it up with a brown rice medley type thing and some broccoli with a dab of butter and the juice of half a lemon. Dad also grilled some shrimp since Mom doesn’t like salmon. It was all delicious and everyone was satisfied.

Another beautiful Sunday. I have so much to be thankful for.

Last night, as I laid in bed trying to quiet my noisy thoughts and calm my wandering mind, I couldn’t help but think her family and the unpredictability of life. I thought about how each day is cause for celebration, for gratitude, for joy. I thought about how many things I take for granted every day, not acknowledging that it can be taken away at any moment. I thought about the many times I have stepped onto my yoga mat, cultivating compassion, gratitude and love throughout my practice, and how quickly I sometimes let the intention and feeling fade as I step off my mat and into my day.

As I laid there, I made a pact with myself to wake-up every morning and say a prayer of gratitude, and even vowed to start first thing tomorrow.

But why wait? Isn’t that the point of all of this? Why wait until tomorrow, when we don’t know if tomorrow will wait for us? In that moment, I went through all the things I am thankful for, sending out love and thanks in my own little way, to all the people who mean who mean so much to me.
