Monday had two strikes by 11:00am today.
Strike One: Left my yoga mat in Tampa. Not good.
Strike Two: There was no A/C when I got back to the sorority house this morning. Not good. Brings a whole new meaning to “the swamp.”
Ok, so these things are petty. But let’s just say Monday did not start out on my good side. Luckily things turned around. Or maybe I turned around? I decided to just go with it and have a good day anyway. No “third strike, you’re out” this Monday. Wink
I left Tampa at 8:00am this morning, stopped for a cappuccino at Starbucks, and rode the two hours back to school. I really do love going home on the weekends. I miss it already!
Lunch starts at 11 at the house, so I made a quick salad once I was back…
The star? Sweet potato with coconut oil…
Mmmmmmmmmmmmmmmm. That’s all.
Class was attended, books were read (okay, that part’s a lie), and other various to do’s were crossed off of the list. I decided this week would be a good time to start using the rice cooker a bit more frequently. After paying attention diligently in class (sarcasm), I daydreamed up a veggie stir fry much like the one I made the other day. I stocked up at Publix:
I started by melting some coconut oil, which had unfortunately already started the process on it’s own thanks to the lack of the A/C. Gotta love a Florida fall… I think the high was 92 today! Sheesh! Anyway.
Into the rice cooker went the coconut oil, then some broccoli slaw,
then some broccoli which I had steamed a bit in the microwave first,
and finally some spinach.
I seasoned all the veggies with a bit of organic tamari and voila! Deliciousness in 5 minutes flat!
Me likey.
I had some rotisserie chicken too…
I always go to Publix and ask for just the breast. They look at me funny. But that’s nothing new Open-mouthed One of these days I might actually make some rice in that darn rice cooker. Maybe. Maybe not!
It’s Homecoming Week here at good ole school which means no sleep for me this week! Since I’m the Vice Prezzzz of my sorority I will be attending all of the events every night from start to finish. Fun? Yes. But homegirl needs her sleep! Staying out ‘til 3am every night, and going to work or class by 9am every morning is going to be rough. But I shall prevail Wink
